Pancakes for Breakfast? Is that healthy?

-->
Gluten-free pancakes with Berry Compote
Pancakes are an excellent way to start the day and if done with health in mind can be a fantastic option for breakfast on a regular basis. Savory or sweet is fine. The key ingredient is the type of flour used. There is almond and coconut flour that is highly recommended or a premix which available at most organic shops or your local supermarket’s organic section.
NOW LET’S MAKE SOME PANCAKES!!!
Ingredients for pancakes:

1 ¼ cup of almond flour (measuring cup)

400 mls of almond milk or skim (adjust accordingly to texture of mix)

2 egg yolks

2 bananas (mashed)

1 Large mixing bowl and whisk

1 ladle or beaker (to pour your mixture to the pan)

Start by sifting the flour into a large bowl with a dry strainer to get rid of the lumps. This will make your mix smooth and your pancakes will not turn out lumpy.
Beat your eggs with a fork and add that to the flour together with your almond milk. Whisk the mixture.
If the mixture is too thick you can add more milk to reduce the thickness if too runny add more flour.

Mix in the 2 bananas and scoop of protein (optional) for protein pancakes. Whisk everything together
Heat up a non-stick pan over medium heat, and add some butter and once it has melted pour the pancake mixture in to the desired shape and size! You can even buy pancake tray to have some fun!!
Within less than a min, the pancakes start to bubble at the top and brown at the sides it is time to flip’em!
Your pancakes should turn out nice and golden brown!

For the Berry compote:

Handful of blueberries

Handful of blackberries

4 – 5 organic strawberries

Soak and rinse your berries before use and place them in a small pot.
Place the pot over medium heat. After 5 mins, the berries should start to soften and the juices will form a syrup.
Continue to place over medium heat till the compote is reduced.
Tip: If your fruits are sweet, it is good on it’s own. You may add a tb spoon of honey once the mixture cools if you need added sweetness. No refined sugars please.

Ready to serve!

Plate your pancakes and ladle your berry compote and garnish it with chopped almonds, sprinkle on some cinnamon powder and serve!

Enjoy!

Starting Your Day Right !

-->
Creamy scrambled eggs with Multigrain toast
I always love to start the day right! This is so easy to make and packed with all EAAs (essential amino acids) which are the building blocks to building muscle! Eggs are nature’s best source of protein! Multigrain bread will provide you with fibres and carbohydrates to fuel you for the day ahead!

Ingredients:
3 whole eggs
Organic Butter (make sure it’s soft)
Multigrain Bread (preferably made from gluten-free flour)
Smoked Salmon (optional)
Chives (chopped)
Salt and pepper (to taste)
3 – 4 stalks of asparagus
1 large tomato/handful of baby tomatoes

Making the scrambled eggs:

Combine eggs and butter into a pot and place over a medium heat.
Stir the ingredients with wooden ladle. Once the eggs begin to thicken take it off the hit and continue to stir but keep the medium heat turned on. Do this several times on and off the heat till you get a nice creamy texture to your eggs.
Add in a table spoon of crème fraiche to give your eggs a smooth texture.
Place eggs on toasts and garnish with chives and smoked salmon! (I usually don’t use salt or pepper cause the smoked salmon already has salt)

Sauteed Veggies:
Wash the vegetables under running water or soak and rinse 3 to 4 times before use.
Heat pan and once hot, drizzle with 1 tb spoon olive or canola oil
Turn heat down to medium heat and sautee veggies till tomatoes begin to peel slightly or brown and asparagus begins to soften and brown.

Ready to serve!

ENJOY!

Take care of your body and your body will take care of you

Reactiv BBQ 2013

The Reactiv team!
We had our annual Reactiv get together cum BBQ session on 22nd September 2013. It was a fun filled event where current and former athletes from Reactiv get to see each other again to catch up as well as to be introduced to the newer members of the team. We had our first newcomers to this BBQ, the athletics team from Marina Bay Sands, coached by our chief co-ordinator Alfred Sim.

Say cheeesssseeeeee!
Athletes from RP having a good time!

The main staple and a continuing tradition of the Reactiv BBQ; the gift exchange session where each attendee will have to bring along something that he/she doesn't need anymore and this means buying of gifts is strictly not allowed! The main purpose of this exchange is for us to bond and at the same time clearing your unwanted items at home! (But still might be useful to the others). Being athletes, we couldn't just sit and mingle around without playing any sport, right? We had games such as frisbee, street soccer and basketball shootout and most importantly,we had a whole lot of fun!

And of course, how can we forget to mention about the food! The ingenious Alfred Sim brought along pineapples to BBQ and oh my, it was amazingly good and it complimented well with the rest of the BBQed items. Overall, this BBQ edition was a great success with the overall turnout and everyone throughly enjoyed themselves. Hopefully, this Reactiv team will continue to go on and grow bigger in time to come.

Summing up a great evening!

SPH Schools Relay Championship

The annual SPH relay is here again! The participation was overwhelming as usual.  This is one of the competitions closest to the Nationals, and we saw all divisions using this meet as the warm up race for the Championship next month.

The events for Day 1 were 4 x 200m heats, 4 x 800m time finals and 4 x 200m finals.
ACS(i) sent a team each for A (boys and girls), B, C Div for the 4 x 200m. As for the 4 x 800m we sent A,B,C boys.
Sengkang Secondary School took part in the 4 x 200m for B (boys and girls) and C boys. Luckily, we managed to squeeze into the finals. ACSi had their school sports day last week and many of them competed and were already quite tired. I was very concerned that there might be injuries due to this.
Day 1 was hot and sunny , but on Day 2, it was raining heavily for about an hour before the start of the event. The first event was delayed for 1.5hrs, lightning alert was on and athletes couldn't find space to warm up. In the end, they found their own entertainment - play cards...
Sengkang Secondary sent the B boys and girls, C boys for the 4 x 100m. The B girls did their best but missed by 1 position and were unable to come in top 8 in the finals. The B boys were lucky - Patrick took off way before the take off mark but slowed down to receive the baton from Shannon, but tried his best to catch up with the pack. He managed to pass the baton successfully to Hari, who brought the baton past the finishing line to qualify to the finals.

ACS(i) sent the 4 x 100m A boys, A girls, B and C boys. Unfortunately, C Div was the only team that was not in the finals. We have a mix of Year 1s and 2s for the C boys, and I guess because it is a rather new team, it needs more exposure for competitions like this.
Our B boys, favoured to win the 4 x 100m, came in 2nd fastest qualifier with Timothy striding easily back the home stretch. However, my biggest worry happened when our 1st leg, Darryl Leong pulled his hamstring while running the curve towards Mitchel. We came in last in the finals.
